These beets are spicy and tangy with a little sweetness.

Ingredients
- 10 lbs Raw Beets ( more or less) I didn’t weight them.
- 1 Cup Apple Cider Vinegar
- 1 Cup Water or beet juice ( from cooked beets)
- 1/3 Cup Fire Honey
- A pinch of salt
Instructions
- Place beets in instant pot . Pressure cook on high for 20 minutes. Let it release naturally, especially if they are large beets.
- In a pot add apple cider vinegar, water or beet juice. Until mixed and warm.
- Add the fire honey and salt.
- Peel the skins off of the beets ( they should come right off with your fingers)
- Cut to desired size and place in jars leaving 1 inch head room .
- Add the liquid from the pot.
- Wipe top of jar clean and place the lids on once cooled.
- Transfer to refrigerator and wait for at least 24 hours before consuming. ( this is so all the flavors get into the beets) The longer the better.
- Serve as you would any side dish. Enjoy
