With the cooler temperatures approaching and fall in full swing, I wanted to create a muffin recipe that’s perfect for this time of year or anytime you’re craving a tasty treat.
These muffins are so good with a cup of my Sugar-Free Decadent Hot Cocoa. The recipe for the Hot Cocoa is under the drink category of my recipes.
Low Carb Spiced Butternut Squash Muffins

Ingredients
- 1 1/2 Cups of Almond flour- finely ground
- 1/4 Cup Coconut Flour
- 1/2 Cup of Low Carb Sweetener ( I use Monk fruit/ Allulose blend)
- 2 teaspoons baking powder or 1 teaspoon Baking soda
- 1 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg ( ground)
- 1/4 teaspoon Cloves or Allspice
- 1/4 Sea Salt
- 1/2 Cup Cooked Butternut Squash mashed
- 1/4- 1/3 Cup Heavy Cream or Almond milk ( adjust if the batter looks to dry)
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- 1/4 Cup Chopped Pecans
- 1/4 Cup Chocolate Chips
Instructions
- Preheat oven to 350 degrees. line a standard 12 cup muffin tin with paper liners or grease the cups well
- Combine dry ingredients in a large bowl. I sift them together, but you can just whisk the ingredients until combined well
- combine all the wet ingredients in a separate bowl. Once combined add to the dry ingredients and mix well. Do Not Over mix the batter.
- Fold in gently the nuts and chocolate chips if adding
- Fill each muffin cup about 3/4 full.
- Bake for 25 minutes, or until tops are set and golden brown , and a tooth pick inserted into the center comes out clean.
- Let the muffins cool completely on a wired rack
- Enjoy these muffins!
